Could be the best pie I've ever had.

Just had the brisket jalapeño cheese pie, 40 years on this planet I’ve never had a better pie. I almost didn’t post this because I don’t want them sold out. But credit where it’s due! Thank you!

I know a thing or two about pies, so trust me when I say that the Waters Bakehouse is now home to Toowoomba’s best pie! Congrats on the opening, I’ll certainly be back again and again!

By far the best pies in town. The service is extremely friendly and welcoming, the coffee is fantastic amongst all the delicious slices and sandwiches. Been three times already since opening. Definitely recommend.

Finally a bakery that puts enough sandwich filler! Bloody beautiful egg and lettuce - generous sized and beautiful bread ! Sausage roll was top top shelf - so happy to have this great business on my side of town 🥰

Take it from a serial pie sampler, these are the best pies in town by a long shot! (way better than beefy's) Coffee is also great. Run by friendly people. Perfect for dropping in and grabbing a coffee and pie on the way to work as they open early.

Do yourself a favour and visit this bakery for a meat pie and support a young guy doing a great job! Brilliant flaky pastry lid, heaps of filling and just like country bakery pies used to be. Next time I'm trying the Pulled Pork pie!

This place had a 10/10 pie, and I'm a critic. Been hunting for the best pie in Toowoomba for multiple months and this is the spot. The pepper pie was a real smack (as it should be) and the cheese and bacon did things right (not overloaded with cheese). Finally the meat lovers was better than the pizza with the same BBQ and sausage power. Best in town I'll be back. God bless.

I walked into Waters Bakehouse expecting a decent meat pie and serendipitously experienced a life altering event. Their famed Brisket Jalapeño Cheese pie looked innocent enough like it paid all its taxes and trained legs and back twice a week , deep golden, solid, quietly intimidating. Heavy and important in the hand. Suspiciously but suitably warm and confident. Checky green jalapeno sliced garnishing the lid… everything passed at a glance. Cracked it open and got a full steamed wafting ceremony of genuine olfactory delight. Proper brisket meat with genuinely nurtured flavour… none of that mystery mince pretence. Jalapeño and cheese were perfectly melded, like they’d signed a lifetime lease in the oh-so silky, silky smooth, subtly cheesy, umami, meaty filling. That first bite shut my brain down for a second… Pastry flaked like autumn leaves in slow motion.. I could hear “Yuruma playing piano keys wonderously and notes of River flows in you” began lightly flowing through my head .. I was transported…the brisket tasted like it had been raised with some serious good honest country values and saintly patience. Jalapeño heat showed up like a cheeky mate slapping your shoulder, and the cheese just wrapped everything in a warm hug I didn’t ask for but clearly needed. Structurally flawless. No sogg. Held together better than any New Year’s resolution. By the last bite I felt it personally in my heart… that it was ending... Five stars isn’t enough... I’d give it seven, maybe a double high five... I went home and genuinely thought about it later like a past relationship that ended too soon. Its even since featured in my dreams… This wasn’t just a pie. This was truly emotional support inside a pastry.
